Denny Kong Double Dry Hopped Modern West Coast IPA

Denny and Drew worked with Kelsey McNair of North Park Beer Co. to make their version of a modern West Coast IPA. All the hop love of a hazy mixed with the bitterness and drinkability of a standard West Coast IPA. Ingredients donated by BSG Handcraft, Yakima Chief Hops, and Wyeast Laboratories

Mashing

Main Rest – 152°F for 60 minutes – pH 5.35
Mash Out – 167°F for 10 minutes

Warrior 0.67 oz First Wort Hop
Cascade Cryo 1.75 oz Whirlpool @170°F for 30 minutes
YCH Trial 702 Citra* (See notes for sub) 0.33 oz Dip Hopped
Cascade Cryo 1.75 oz Dry Hop #1 (2 days)
Mosaic, Mosaic Cryo, Citra, Citra Cryo, Simcoe, Simcoe Cryo 1.75 oz each Dry Hop #2 (3 days)

Wyeast 1217-PC West Coast IPA / Wyeast 1056

Misc:

Fermentation Temperature Schedule:
Aerate wort and pitch @ 62F with the setpoint at 64F,
When gravy drops to 1.023 change setpoint to 70F
When gravity drops to 1.014, remove/harvest yeast and add first dry hops and 13ml ALDC
When gravity drops to 1.010 add second dry hops
48 hours after second dry hops, resuspend hops via rouse with CO2 (or reciculate if possible without introducing oxygen)Add pressure to headspace and crash fermentation vessel to 32F after verifying that VDK (precursor for diacetyl) has been substantially removed by performing a forced diacetyl test.Once fully crashed, add Biofine and carbonate to 2.6 volumes via carb stone in fermentation vessel.
