I like sours, but the time

I like sours, but the time commitment and the likelihood of making "enteric" tasting swill scares me.  I love knowing the process of spontaneous fermentation but it isnt for me right now. If I were to do it i would just get some commercial bugs. Congrats to those of you who love this form of experimentation.  Thanks for the great content.
