White Wheat Malt 4.5 lbs (45%)

Mashing

150°F (65.5°C) for 60 minutes

Hops:

Loral 11.5%AA 1 oz Whirlpool 185°F for 30 minutes

Yeast:

Propagate Labs Lactobacillus Plantarum (Pitched as a kettle addition and allowed to sour
Wyeast 3711 French Saison (pitched post souring phase)

Misc:

10 ml 80% Lactic Acid – Mash
0.75 oz Coriander Seed – Flameout
0.75 oz Sea Salt – Flameout
1.0 tsp Yeast Nutrient – Flameout

Notes:

Kettle soured overnight with Plantarum.
Chilled after a brief simmer (no boil) and pitched with Saison
Split into half –

Plain portion got 1 campden tablet.

Guava portion got 3 campden tablets, 1.5 tsp potassium sorbate and 3lbs of homemade guava puree. (1lbs/gallon)
