|Kettle soured overnight with Plantarum.|
|Chilled after a brief simmer (no boil) and pitched with Saison|
|Split into half –
Plain portion got 1 campden tablet.
Guava portion got 3 campden tablets, 1.5 tsp potassium sorbate and 3lbs of homemade guava puree. (1lbs/gallon)
