It's time to swing way South of the Border and head to Chile with Denny as he attends the 2nd Annual South American Cup in Santiago, but first we look at your canning feedback. In the pub, we sit down with a couple of special beers (and Drew gets to be right!), talk about Ostrich boot based silliness, bootleggers in Peru (Indiana) and what the new model of acquisitions seems to be currently with Lagunitas buying part of Shorts and Brooklyn, 21A and Funkwerks teaming up.
In the library, we take a swing around Dr. Charlie Bamforth's recent speech in Australia about Craft Beer and the things he thinks brewers really need to be focusing on. While in the Brewery we talk about the upcoming Green Hop extravanganza from YCH Hops.
And then in the lounge, we sit back and listen to Denny's memories of his trip to Chile and we even hop in the back of a crowded vehicle shepharding Denny to the foot of the Andes mountains and Tübinger Brewery in the middle of some of the world's premier wine country. Drew, Marshall and Josh talk about the Randall F*cker
The Setup (aka Drew Talks)
If you listened to Episode 42 of the podcast, you know that Marhsall Schott (Brülosophy) and I wandered around the Southern California Homebrewers Festival interviewing various silly people and enjoying ourselves. We conducted our interview with Kevin Baranowski behind the Maltose Falcons’ booth. We wandered out of the booth after the interview and were immediately confronted with a strange sight – a man funnelling beers into a metal gadget, closing valves, squeezing triggers and opening more valves to pour the beer.
Being armed with microphones and bellies full of bourbon espresso infused sweet stout, we naturally had to confront this hooligan. You can listen to our interview with said hooligan, Joshua Kunkle, in Episode 44 of the podcast (49:08). In the process of explaining his Randall F*cker, he really blew our minds with the creative re-use of gear to produce a different beery experience.
Much like Drew’s beloved iSi Whipping Siphon trick, Josh’s Randall uses the pressurizing effects of CO2 to rapidly infuse the oils and flavor compounds of a substrate (orange peels, herbs, spices, hops, etc) into the beer. He pours the beer via a funnel into a pressure chamber, hits it with CO2, and then after a few seconds opens a service valve to pour the beer into a waiting glass.
Josh reused a stainless steel filter he purchased from a defunct brewery to create the pressure chamber, but you can use whatever is handy and can hold pressure. (In theory, you could use a thick walled whole house filter, but remember those aren’t meant to be a pressure device and we just saw what can happen with a plastic device under pressure – granted that was at a much higher pressure, but still.)
Homebrewers being homebrewers – y’all wanted to know how to build this – so here you go! I present Josh’s guide to building your own Randall F*cker. Go forth and infuse your beers!
Josh’s Instructions
The cap of the infuser is the hardest part to assemble on account in includes the flow-in for both the CO2 and Liquid needed to create the infusion process. If you go with a filter housing, make sure to have the liquid flow in through the “In” side of the filter housing cap and the CO2 flow into the “Out” side of the cap. Since the CO2 side is pushing the pressure in, it doesn’t need a ball valve like the liquid side.
This infuser uses a trigger mechanism as seen below. This can usually be found at either a homebrew supply shop to help push corny kegs, or at a bicycle supply shop for blowing up one’s bike tire really fast. The threaded piece fits nicely over the male compression fitting on the filter housing cap
The filter housing chamber is where all the magic happens for this device. The chamber, as seen in the pic below, has two layers of a fine mesh screen to help filter out any big chunks of whatever fruit,
vegetable, or hop you put in the chamber itself to be infused. The screen came from cutting up one of those screens you find at restaurant supply shops that go over a pan being used for frying food.
The bottom of this particular filter housing had a means to attach a ball valve, which works great to release the infused liquid right into a cup when ready. For those that may go the plastic filter housing
route, you may need to drill this part out and attach your own ball valve in place for the same effect.
One thing that may be worth fixing on my design if you can do it is to create some sort of pressure release valve on the filter housing cap so that it releases pressure as the liquid flows into the chamber, which can speed up the flow into the chamber itself.

Using the Randall F*cker
Add your substrate to the chamber (Joshua was using orange peels in his demonstration at SCHF).
Seal the device
Open the input valve, pour in the beer.
Close the input valve, squeeze the CO2 injector trigger.
Wait 10 seconds, open the output valve and enjoy your infused beer.

The Big Parties – We know that Thursday’s Craft Beer Reception (formerly known as ‘Pro Night’) and Friday’s Club Night will be bonkers, but what about Saturday’s new “Knockout” party in lieu of the old Awards Banquet? (Rumor has it there will be much silliness that night as the Knockout party ends early and others will carry on – even possibly a cocktail party)
The City – Chip and the local committee in MSP have put together a great Insider’s Guide to the city. Take a break from the convention and bask in the Minnesota niceness of it all. MSP is a hell of a beer town and we’re right in the heart of it this year – not all the way out in the burbs like last time.
The People – Remember, this is your chance to talk your beer obsessed brain out and not have people’s eyes glazed over. Be friendly! Say hi! If you see Denny and Drew running around – stop us, say hi, offer us a beer! Speaking of which – if you want to really guarantee a sighting (or improve your chances of no sighting) see the next segment!

In the feedback, we take a moment to re-visit some questions about Bio-Transformation and address some very pointed criticism about our Brew-Tan experiment.
In the pub, we enjoy a pint or two we raise a pint to Peter Simpson, talk a big beer slide, how to avoid selling out to the IPA-borg and a Chinese Bud Bust.
Inspired by the MBAA Master Brewers podcast, we stop by the library and look at Barth-Haas's latest dissection of hop flavor and aroma as spurred by all these fancy new hops we have at hand.
We stop in the brewery to review Drew's reviews of several malts, including those from our sponsor, Mecca Grade Estate. Which malt will reign supreme?
Then in the Lounge, it's a double dose of interviews – first, live from the Southern California Homebrewers Fest, Drew and Marshall Schott (Brülosophy) interview Kevin Baranowski about his attempt to wake everyone up at the Fest with a Sweet Stout served through a Randall stuffed with Bourbon soaked coffee beans. Then, with podcast magic, we blink our eyes and suddenly Drew swings up to the Bay Area and catches up with Nick Impellitteri about what's happening with the Yeast Bay.

New opening to the show this time through. Let's see how you like it (let us know!)
In the pub, we stop by and take about brewery charities and one in particular for Denny's area. We talk about one previous guest's new “kid” rules and the response, before we tackle the big Wicked news of the week and the really insidious piece that virtually no one is talking about behind the scenes.
We stop in the brewery to talk the latest malt report from our good friend Teri Fahrendorf and Denny reminices about the good old cow and hog reports of his youth.
In the lab, we announce our latest experiment – the IGORs are taking a stab at the Brulosophy gang's Biotransformation ale – aka can you tell a difference between a beer dry hopped at high krausen and one dry hopped in secondary. Of course, we're adding an extra special twist to the whole thing because we're required to by law. Twist one, testing two different strains with some IGORs pulling out Wyeast 1318 and some pulling Wyeast 1056. Twist two – we're going to have some visually blind trials vs visual trials. Woo…
Then in the Lounge, Denny talks to Jessica Davis of the Bruery about what it means to do QA work for a brewery with as many on going projects as they have. It's seriously interesting to learn what it means to work in the beer world and be tasked with keeping an eye on things

A few months back, I was contacted by Tiah Edmunson-Morton of Oregon State University and the Oregon Hops and Brewing Archives. In an interesting turn of events, they wanted to talk to me about Oregon, homebrewing and my part in the whole scene. They are even archiving all the work we’ve done and adding it to their collection which includes the pioneering and humbling work of Fred Eckhardt. Watch below to learn about me, Iowa, concert touring, how close I came to corrupting America’s youth as a teacher and, well, the whole brewing thing (as well as my partnership with Drew and where we differ)
